Pearl Couscous

During my leave my college roommate and one of my favorite people in the whole world (Mer or now better known as Auntie Mimi) came to visit. She and my other close friend (and also another one of my most favorite people), Heather, were here at the same time (she is known better known as Auntie Booty now). It was a busy busy 3 to 4 days but so wonderful to have them here to visit us. While they were here they took the time to make us a pretty awesome dinner. It was nice to be taken care of for a bit and to see my friends cooking skills at work! Mimi as you can see from the link above has definitely dabbled in some serious cooking in the past as compared to my awesome cooking skills that tend to lean towards boxed mac and cheese.

One of the things Mimi introduced us to was Pearl couscous. Neither hubs or I had ever had it before and thought it was a yummy addition to our cooking repertoire. Needless to say I have been dying to try and make it since and finally got around to doing so the other night. Below is a link to a recipe I found online. I altered it just a tad by using green peppers instead of asparagus (a request from hubs), and I nixed the parmesan since I am dairy-free these days. It took about 30 to 45 minutes total but was easy enough for a week night with a little one. AND you can have a glass or two of vino since the recipe calls for a dry white! Hope you enjoy!
